WHAT IS ROMAN PINSA: It is a very old product from the Roman era, oblong and almost oval in shape. A mixture of wheat, soy, and rice flours is used for its preparation. Compared to classic pizza dough, it requires a different amount of water and a lower percentage of yeast. The result is a crust that is crispy on the outside and with a soft crumb on the inside. In addition, the way of working it is completely different from that of the traditional pizza because the dough will rest for 72 hours.
